I found the instructions here on the help site, but they say to go to the "Image" icon on my toolbar, of which there isn't one. Do I need to add it somehow, and if so, how?

With the launch of the MIT Sites service, Drupal Cloud is being phased out. Effective January 2, 2024, no new Drupal Cloud sites will be created. Students, faculty, and staff are invited to visit sites.mit.edu to create a new MIT website.

Just below the body field, you'll see a pull-down menu for Text Format. To insert images, you want to use Full HTML, not Filtered HTML. When you change the format, the additional buttons will appear, as described here:
